Mark and I decided to go vegetarian for the month of April. An experiment, really. March was a challenging month, and high stress in our house translates itself into pizza, cheeseburgers and other glutenous indulgences. So, in order to come clean and challenge my culinary rut, we're vegging out. However, that does not mean, come May 1st, that we won't be the first ones at Five Guys for a Bacon Cheeseburger. We are going through that right now for health reasons. I don't consider myself a big meat person, but not being able to use it has made me rethink a lot of recipes and get quite creative. We have made pizza and pasta several times. I am excited to see more of your veg recipes :)
looks delish! Way to go on eating no meat, i am going on 5 years now...it is hard at first but than you will never want to go back!
good luck with that. if i were going vegetarian i'd wait til summer when so many fruits and veggies are in season...but then again you have to fight the urge to have a hamburger at a bbq. so maybe april is safe.
