In With Cupcakes


We're dropping like flies over here: three weekends with the stomach flu and now the swine flu. Needless to say, we've had a lot of inside time to watch movies, take naps, clean the microwave, work on puzzles, and organize the toy closet. Wahoo! We've missed a lot of the disappearing Fall--bummer--so yesterday we brought some autumnal delight inside with these fabulous pumpkin cupcakes. Enjoy!

Golden Pumpkin Cupcakes with Maple Cream Cheese Frosting
adapted from Gourmet (I know, how dare I?)
Makes 12--what?! Only 12?! Definitely double it.

1 1/2 cups all-purpose flour
1 tsp baking powder
1 cup canned solid-pack pumpkin
1/3 cup vegetable oil
2 large eggs
1 tsp vanilla
1 tsp pumpkin-pie spice
1/2 tsp cinnamon
1 1/4 cups sugar (I used half brown and half white)
1/2 tsp baking soda
1/2 tsp salt
1 cup golden raisins, optional but delish

Put oven rack in middle position and preheat oven toe 350F. Put liners in muffin cups.
Whisk together flour and baking powder in a small bowl.
In another bowl, whisk together pumpkin, oil, eggs, pumpkin-pie spice, cinnamon, sugar, baking soda, and salt in a large bowl until smooth, then whisk in flour mixture until just combined. Divide batter among muffin cups (each should be about 3/4 full). Bake until puffed and golden brown and a wooden pick or skewer inserted into center of a muffin comes out clean, 20-25 minutes.

Maple Cream Cheese Frosting
Beat together until fluffy:
1 cup butter, softened
1 bar cream cheese, softened
2 Tbl maple syrup, always better with the real deal
about 4 cups powdered sugar
2 Tbl milk, depending on how soft you like your frosting

Spoon frosting into a plastic bag, snip off the corner and pipe those swirlies away. Would be super cute with a candy pumpkin on top, if you're feeling particularly festive.

I can't believe you're sick again, esp. with the swine flu!! Has everyone gotten it? Hopefully, this means you'll be immune for the rest of the year, right?

We have pumpkin and we have cream cheese. As soon as I get a chance, I'm trying these. They look great!

Swine flu??? What?!? I hadn't heard. You poor things. I'll be thinking of you and sending all of the loving get-well good vibes that I can your direction.

And those cupcakes...holy cow! Not only are cupcakes my favorite food, but pumpkin. Now you've gone and done it. I'll be adding these to my belly circumference before you can say YUM.

We soooooooo loved these when you brought them over. Lena kept trying to lick the frosting off each cupcake. She didn't want the rest. Thank you so much.
