For Christmas, I gave away a copy of Ree Drummond's "Pioneer Woman Cooks" to my mother-in-law, my mother and my favorite cooking gal pal, Kim. Thank goodness for my mother's obvious good taste and foresight, there was a copy waiting under the tree for me as well. Cheers for Mom!
Folks, this is a seriously super cookbook, and I love cookbooks. I read them like novels, and this one is a page-turner. She is such a delight, and I don't care who you are, who doesn't want a good recipe and a ginormo helping of Edna Mae's Sour Cream Pancakes, Roasted Corn Salad, Perfect Pot Roast or Peach Crisp with Maple Cream Sauce? Yummmm and I mean it.
So, on Sunday, we enjoyed her recipes for Spicy Pulled Pork and Flat Apple Pie. They were both fantastic, although being as I can never let things be, I would add more spice and vinegar to the pork, and I used an all-butter crust for the pies.
