Seer-ni-ki

These are one of only a few Russian delicacies that made it in to my American kitchen. I love these. The literal translation is "little cheeses," but they're really ricotta fritters, golden and crispy on the outside, smooth and creamy on the inside. They are so easy to make and always a lovely treat for breakfast or dessert.
Ricotta Fritters (or Little Cheeses)
1 large container Ricotta cheese (32 oz.)
3 eggs
1/2 cup sugar
2 1/2-3 cups flour
1 tsp salt
vegetable oil for the pan
Combine cheese, eggs and sugar until smooth. Fold in flour and salt until completely mixed. Warm oil on med-high 1/4 in. deep in a large skillet or frying pan. Form small disks of sticky dough and drop gently in to pan. Flip when golden, about 5 minutes. When golden on both sides and firm to the touch, dry on paper towels. Serve warm with dollop of sour cream, good jam and a tease of sugar. My girls like syrup or powdered sugar.
